The first time in history that the word "cocktail" was used, we find in print comes from an 1806 newspaper from upstate New York.  This cocktail was described as "a stimulating liquor, composed of spirits of any kind, sugar, water, and bitters..." Later in the 19th century, the cocktail picked up a number of additions and refinements: liqueurs, fortified wines, various bits of garnish, et cetera. 

At the end, most people started to go for more simpler cocktails, than their ancestors liked.
